I use apple cider vinegar (ACV) for all sorts of things around the house, from cleaning to taking advantage of its health benefits. It’s a staple for us. While any vinegar works for cleaning, I always pick organic, unrefined apple cider vinegar with “the Mother” for recipes.

People often ask me what “the Mother” is and why it’s important. Simply put, “the Mother” is a colony of beneficial bacteria that transforms apple cider into vinegar. It’s like the SCOBY in Kombucha. This culture gives unrefined vinegar its cloudy look, along with health benefits. In contrast, clear, pasteurized vinegars lack “the Mother” and its benefits.

Clear vinegars are perfect for cleaning, as they don’t leave residue. But for cooking and other uses, raw, unfiltered versions have many more health benefits. Did you know the term vinegar comes from the Latin words for “sour wine”? Vinegar’s been around for ages. Legends say Cleopatra used it to dissolve a pearl, and it’s even mentioned in the Bible.

Vinegar production took off when French vintners created a continuous brewing method in 1394. They used oak barrels to ferment and siphoned off the vinegar, leaving some of it behind with “the Mother” to start the next batch. This method was similar to continuous brew Kombucha, meeting the growing demand for vinegars.

Unfiltered, unrefined vinegar retains many benefits lost in filtered versions. The acetic acid formed during fermentation offers many advantages, including potential effects on blood sugar, blood pressure, and cholesterol. While more research is needed, acetic acid has a long history in alternative medicine.

Vinegar is a strong food preservative due to its high acid content. Historically, it made water safer to drink. For cleaning, while vinegar is good, it’s not a registered disinfectant. For serious disinfection, hydrogen peroxide-based products or strong natural soaps are better options.

Some digestive issues stem from low stomach acid, and apple cider vinegar can help. I find that a teaspoon of vinegar in water provides heartburn relief. ACV is also noted for immune support. There’s a legend about thieves during the bubonic plague using herbal vinegar to stay healthy.

“The Mother” also enhances vinegar’s potency over time and boosts immunity. The acids in ACV are fantastic for hair, which is why it’s often used as a rinse to condition and add shine. It’s also popular in skincare, aiding sunburns, skin rashes, and mosquito bites, typically diluted with water.
